Big thank you to my cousin Mike and his lil’ helpers for picking me some delicious green beans and Kirby cucumbers. They are so delicious and fresh! I made a cucumber salad for lunch and for dinner I had Parmesan roasted green beans. Yum!!! Thanks Mike! Great job!!20140705-201209-72729581.jpg

Diana’s Cool Cucumber Salad

2 cucumbers
1/4 cup organic apple cider vinegar
Fresh parsley
1/4 cup coconut oil (use whatever type if oil you prefer)
Sea salt
Fresh ground pepper
1/2 red onion finely chopped

Combine. Mix. Cool and enjoy!!

Roasted Parmesan Green Beans

Ingredients:

12 oz green beans, trimmed (make sure they are dry)
2 tsp olive oil
kosher salt + fresh cracked pepper to taste
1/4 tsp garlic powder
1 1/2 tbsp shredded parmesan

Directions:

Preheat the oven to 425°F. Line a baking sheet with aluminum for easy clean-up.
Lay green beans out on the baking sheet and drizzle oil over them. Season with salt, pepper and garlic powder and toss to evenly coat.

Spread them out on the sheet so that they all lay flat and place on the lower third section of your oven. Bake 10 minutes, shake the pan to turn; bake 5 additional minutes. Remove from the oven and sprinkle with

    1. I am making green bean fries today! I’ll let you know how they turn out and will post the recipe if it’s a hit! Apparently they are delicious…..even kids will eat them! I think you have two perfect test subjects to try that on! Keep growing and I’ll keep cooking!!!
